Healthy Lunch Recipe:

Cluckless Chicken Lettuce Wraps

The clue is in the title — these vegan-friendly alternatives to the perennially popular chicken wrap are so easy to make you would feel guilty devouring so many if they weren't also so good for you. Here's what's needed:


1 cup light coconut milk

3 tablespoons Peanut Hottie Original

2 tablespoons soy sauce

2 tablespoons fresh ginger, sliced

1 tablespoon honey

1 garlic clove

Crushed red chilli pepper flakes


20 large lettuce leaves

300g tofu, drained and patted dry, sliced into finger-sized pieces

1 red bell pepper, thinly sliced

1 small cucumber, thinly sliced

20-25 Thai basil leaves (can be substituted for regular basil)



Directions

Blend the coconut milk, Peanut Hottie Original, soy sauce, honey, fresh finger, garlic and red pepper flakes together, and set aside.


Lay out the lettuce leaves, placing several slices of tofu in the middle, with red pepper and cucumber laid on top, finished with one or two Thai basil leaves. Fold the lettuce into a wrap ensuring all ingredients are contained. Distribute the dipping sauce into smaller serving bowls — enough for one per person — and start dipping.


A great aspect of this is the fact you can make a batch of dipping sauce and keep in the fridge for up to three days and it should keep, meaning our cluckless chicken lettuce wraps can also be prepped in advance and eaten as a healthy form of fast food.
