  • Peanut Hottie Banana Bread by India Benjamin

This week, while we were chatting with friends and fans on Twitter we came across this recipe by India Benjamin (check out her blog), which we think is fantastic.

So without further ado here is India’s recipe for Peanut Hottie banana bread.

    Banana bread

    2 cups self-raising flour
1 and a quarter teaspoon baking soda
    1/4 teaspoon salt
2 teaspoons Peanut Hottie (add more if you want a stronger flavour)
    2 teaspoon cocoa powder optional
    3 insanely ripe bananas
    1/4 cup honey
    1/4 low fat Greek yoghurt
    2 eggs
    1 tablespoon flax seed optional

    1. 1) Preheat the oven to 180ºc and grease a bread tin
    2. 2) Whisk together the flour, baking soda, Peanut Hottie, cocoa powder and salt so there are no lumps
    3. 3) In a separate bowl, mash the bananas and mix in the rest of the wet ingredients N.B. you’re meant to get all the lumps of banana out, so best off using an electric whisker
    4. 4) Mix all the ingredients together and pour into the bread tin
    5. 5) Sprinkle flax seeds on top and place in the oven for 30 – 40 minutes (until you put a knife in and it comes out clean)

*PS A hat tip to @SurelyChar for putting us on to this recipe!*

If you’ve got any Peanut Hottie recipes please let us know via Facebook, Twitter or email as we’d love to share it with our fans.
